When making yeast bread, the kneaded dough needs time to rise, or prove. The ‘proving’ is the rising of the dough, and improves the flavor and texture of the bread.

How to Prove Yeast Products
After kneading, round your dough into a ball. Place this dough ball in a lightly oiled, large mixing bowl. The dough should be turned over so the top is oiled too, as that prevents it drying out. To make a successful 'prover' at home, follow these steps.

  1. Clean your sink, and put a plug in.
  2. Place a bowl upside down in the bottom of the sink.
  3. Fill the sink with hot water to just below the top of the bowl (so the bowl looks like an island).
  4. Sit the container or tray holding the dough on top of the bowl (island).
  5. Cover the sink with a towel to let the dough slowly prove until it reaches the three-quarter mark. The other quarter will 'kick in' in the oven.
